Forget that clichéd “shrimp on the barbie,” it’s brunch that Aussies really love. And soon a heaping serving of “down under” brunch culture will be available to experience without having to go too far from Vancouver – in fact, you’ll just have to travel to Surrey.
A new restaurant called Ruex is set to open this spring, and the concept is Melbourne-style brunch.
Ruex is setting up at #120- 13615 Fraser Highway in Surrey, in King George Hub, a mixed-use high-rise development in Surrey City Centre near the King George SkyTrain station.
“Every detail throughout the restaurant is inspired by Melbourne – from the design, to the coffee, and of course the food,” describes Ruex on its website.
The food at Ruex is in the hands of head chef Greg Baja. who will be executing the Aussie-inspired dishes like avocado toast and corn fritters, along with charcuterie, Aussie wines, and coffee.
Baja will bring his background to the menu, though, including in signature dishes like his Eggplant Omelet.
“This special dish pays homage to Greg’s Filipino roots and features a tender cooked eggplant, chorizo, and three perfectly cooked prawns – all topped with a delicious braising jus,” the restaurant elaborates on its Instagram feed.
Of course, while Ruex is hyping the brunch angle, the restaurant will also morph into an evening spot. “From 3 p.m. onwards we turn into your new favourite after work spot for delicious cocktails and delectable share plates like our soon-to-be famous Jerk Chicken Bites,” touts Ruex on social media.
